If you’re anything like me, you are always on the lookout for more meatless meals for Lent. Of course, if you are abstaining from meat on Fridays as well, these plant-based and meatless meals will come in handy all year round.

Meatless Meals for Lent

LEMON GOAT CHEESE FIDDLEHEAD FRITTATA
This lemon goat cheese fiddlehead frittata recipe is easy to make and incredibly tasty. If you don’t care for fiddleheads or they aren’t available in your area (or are out of season – they are in season in my area from mid-April through May), asparagus, spinach, or broccoli are great substitutes.

INSTANT POT WILD RICE PILAF
Although I often serve this Instant Pot Wild Rice Pilaf as a side dish, it’s so hearty and filling that it’s perfect as a vegetarian main dish too.

ROASTED BEET AND GOAT CHEESE SALAD
Roasted beet and goat cheese salad is light and fresh and packed with flavor.

MOZZARELLA STUFFED POTATO CROQUETTES
These mozzarella stuffed potato croquettes are like a cross between mozzarella sticks and mashed potato pancakes. They are incredibly delicious and easy to make. You can even use up mashed potatoes and turn them into these croquettes.

FOUR INGREDIENT PIZZA CRESCENT ROLLS
We love pizza around here – making it and eating it! These 4 ingredient pizza crescent rolls make having pizza quick and easy. Get the kids to help with this simple recipe! Use a plant-based meat substitute or just make them with things like onions, mushrooms, green peppers, broccoli, pineapple, potatoes, tomatoes, or spinach.

VEGETABLE POT PIE
This vegetable pot pie may not have meat but it is certainly not lacking in flavor. Simply saute some vegetables and a little tofu, then whip together a dough for the double crusts, and then layer everything and bake!
EASY BREAKFAST PIZZA

If you like breakfast for dinner, you’re going to love this Easy Breakfast Pizza. Again, simply use a meat substitute or leave out the meat entirely. It’s still incredibly delicious! Want to kick things up a notch? Add some spinach or kale!

SWEET POTATO GNOCCHI WITH CILANTRO PINE NUT PESTO
This simple delicious sweet potato gnocchi recipe is easy to make & a yummy addition to your meal plan. The optional cilantro pine nut pesto sauce takes it to the next level!

NEAPOLITAN LAYERED PASTA BAKE
If you want to know one of the MOST popular recipes in my house, it is this Neapolitan Layered Pasta Bake. This is a very quick and easy recipe to prepare. It was an instant hit with my family and quickly became a much-requested family favourite.

LENTIL AND VEGETABLE QUINOA SALAD
This lentil and vegetable quinoa salad can be served warm, cold, or at room temperature. It is quick and easy to make a large quantity of this delicious dish which can be used as a main dish or side dish.

TORTA PASQUALINA
This is an Italian Easter pie known as Torta Pasqualina. Some call it Italian Easter Cake but it is a savory dish made with puff pastry, ricotta, spinach, and eggs.

EGGS OVER ASPARAGUS WITH PARMESAN GREMOLATA
These Eggs Over Asparagus with a Parmesan Gremolata scream gourmet but they are so quick and easy to make! Perfect for a simple weeknight meal or brunch.

TOFU NUGGETS
These tofu nuggets are a great substitute for chicken nuggets. I generally serve them with some homemade oven fries – white and sweet potato – that I make by cutting potatoes into strips, dipping them into egg white (adds a lovely crunch), and baking. You can then even apply some seasoning to them like your favourite herbs or spices like paprika. Serve them with your favorite dipping sauce.
PIEROGI CASSEROLE

This lasagna-style pierogi casserole takes the flavours of pierogis and puts them into a dish that’s quick and easy to make! Use plant-based bacon substitute or leave out the bacon.

THAI TOFU SKEWERS
These Thai Tofu Skewers are another delicious meatless meal option. Vegan and gluten-free, these skewers are packed with flavor & nutrients!

CHICKPEA MEATBALLS
Even if you’re not vegan, these chickpea meatballs check all the boxes for a delicious, family-friendly meal. Make them a little bit smaller to use as an appetizer.

CAPRESE GARLIC BEAN SALAD
This Caprese garlic bean salad is so easy to put together and is perfect as a vegetarian main dish or a side dish to accompany nearly anything. Make it in about 10 minutes and serve it at your next backyard BBQ or picnic.
